What You're Signing Up For

The New Zealand Certificate in Baking (Level 3) provides practical training in baking breads, doughs, cakes, pastries, and small goods according to industry standards. The program emphasizes teamwork, communication, and food safety. Students complete at least 40 hours of work experience in the baking industry and are prepared for entry-level roles in bakeries or to continue on to cookery or food service pathways.

Course Content

  • Practical 1 – Breads and Doughs: Production of breads and doughs, food safety, kitchen safety and hygiene, communication skills.
  • Practical 2 – Pastry Products: Production of pastry products, food safety, kitchen safety and hygiene.
  • Practical 3 – Cakes and Sponges: Baking cakes and sponges, food safety and hygiene.
  • Practical 4 – Bakery Small Goods: Manufacture of small baked goods, food and kitchen safety.
  • Teamwork and communication in the bakery environment.
  • Industry work experience (40 hours).
