What You're Signing Up For

The Certificate in Baking (NZ Certificate in Baking Level 3) is designed for those interested in pursuing a career in baking or hospitality. Students gain knowledge and practical experience in producing, finishing, and presenting a wide range of basic and contemporary bakery items. The programme is delivered over one semester, and includes full-time or part-time options, with learning taking place in a purpose-built training kitchen. This entry-level course prepares graduates for work as trainee bakers, baking apprentices, or café chefs.

Course Content

  • Use of different flour types, sugar varieties, and yeast
  • Ingredient ratios and baking techniques
  • Food health and safety, hygiene processes and procedures
  • Production of yeast-raised breads (baguettes, bagels, pizza bread, plaited loaves)
  • Creation of biscuits and cookies
  • Sweet and short pastry making skills
  • Traditional cakes (lamingtons, Victoria sponge, berry friands, slices)
  • Teamwork in bakery production
  • Modules: Introduction to Baking, Baking Industry Essentials, Introduction to Craft Baking Skills, Bakery Café Assistant
