What You're Signing Up For

This programme helps secondary school students advance their culinary abilities, learning to prepare a range of dishes and desserts in a commercial kitchen. It covers culinary theory, nutrition, various cooking and presentation methods, and prepares students for careers or further study in the hospitality industry. It is delivered in partnership with secondary schools as part of the Waikato Trades Academy.

Course Content

  • Preparing dishes using basic methods of Asian cookery in a commercial kitchen
  • Demonstrating knowledge of nutrition in commercial catering
  • Preparing and producing basic hot and cold dessert items
  • Preparing and cooking basic vegetable dishes
  • Blending ingredients and flavours for local and international cuisine
  • Plating and serving dishes
