What You're Signing Up For
The UCOL New Zealand Certificate in Food and Beverage Service (Level 4) equips learners with supervisory and operational skills in food and beverage service across various hospitality settings. The programme includes applied learning in handling food safety, customer service, restaurant food and beverage operations, legal compliance and practical experience in an on-site training restaurant. Graduates will be able to provide effective, high-quality dining experiences, manage service standards and engage with customers and colleagues professionally.
Course Content
- Hospitality Service Standards: managing hazards, security practices, health and safety, food safety and security standards, customer service skills, communication skills (oral, written, visual), feedback
- Restaurant Food Service: menu design and knowledge, dietary requirements, food allergies, advanced table service, oversight of food service, methods of payment, standard operating policies and procedures, work roles and compliance
- Restaurant Beverage Service: applicable legislation (Sale and Supply of Alcohol Act 2012, Health and Safety at Work Act 2015, Fire Service Act 1975, etc.), host responsibilities, licensed premises management, hot beverage preparation and service, alcoholic beverages service including cocktail mixology
What you need to know first
40 credits at NCEA Level 1 including 10 Literacy and 10 Numeracy credits OR New Zealand Certificate in Food and Beverage Service (Level 3) OR relevant Level 2 qualification or recognised equivalent
Special/Discretionary Admission criteria for applicants under or over 20 years old without general admission requirements
English language proficiency: IELTS 5.5 with no band less than 5 or equivalent
