What You're Signing Up For
The Academy Cookery Level 3 Programme offers secondary school learners the opportunity to learn and refine practical cookery skills including cooking pasta, egg, vegetable dishes, baking basic cakes and sponges, and preparing complex sandwiches. The programme emphasizes applying food safety practices in commercial food establishments and gaining relevant industry skills in a commercial kitchen setting. It provides 24 credits at NZQA Level 3 and serves as a pathway to further tertiary qualifications in cookery and food and beverage service.
Course Content
- Apply food safety practices in a food-related establishment (Unit Standard 27955, 5 Credits)
- Prepare and cook basic pasta dishes in a commercial kitchen (Unit Standard 13316, 3 Credits)
- Prepare and cook egg dishes in a commercial kitchen (Unit Standard 13314, 4 Credits)
- Prepare and bake basic cakes, sponges and scones in a commercial kitchen (Unit Standard 13325, 4 Credits)
- Prepare and cook basic vegetable dishes in a commercial kitchen (Unit Standard 13293, 6 Credits)
- Prepare, assemble, and present complex sandwiches for service in a commercial kitchen (Unit Standard 13282, 2 Credits)

Year 11 - 13 secondary school learner status (NZ citizen, permanent resident or applicable visa holder)
Recommended school subjects: English, Home Economics, Technology
