What You're Signing Up For
The New Zealand Certificate in Cookery (Level 3) is a hands-on, 17-week full-time programme delivered on campus in Dunedin. It introduces students to essential culinary skills and techniques used by chefs and cooks in professional kitchens. The curriculum includes teamwork and food safety, with practical experience in preparing breakfast dishes, café meals, restaurant-quality food, bakery items, and sweet treats. The programme prepares students for careers in hospitality and offers pathways to higher cookery qualifications or combined certificates in food and beverage. It features four 15-credit courses focusing on different cookery skill areas and includes an orientation on occupational safety and health risks in commercial kitchens.

- Introduction to Cookery Skills 1: Safety and preparing breakfast and light café meals
- Introduction to Cookery Skills 2: Working in a professional kitchen team, preparing restaurant-quality food
- Introduction to Cookery Skills 3: Baking and pastry skills for sweet treats and bakery items
- Introduction to Cookery Skills 4: Cooking classic café dishes such as pies, salads, and cabinet food
