The New Zealand Certificate in Food & Beverage, Barista, Wine & Spirits (Level 4) provides comprehensive training in coffee making, restaurant and café service, wine knowledge, bartending and mixology, compliance, and employment obligations. The course is designed for those starting a career in hospitality and event management, focusing on both the practical and theoretical skills needed for front-of-house and beverage service roles. Graduates gain both national and international recognition, including the WSET Level 2 Award in Spirits and the Licensed Controller Qualification (LCQ). The programme supports entry into a fast-growing sector and provides pathways toward further study in hospitality and wine.

Course Content

  • Barista Intensive: coffee styles, single-origin coffees, milk and milk substitutes, coffee preparation
  • Restaurant & Café Service: customer service, sales, food and beverage products, culinary terms, cookery techniques, specialist products
  • Introduction to Wines: grape varieties, international wine regions, wine vocabulary, NZ and international wines, wine appellations
  • Bartending, Cocktails & Mixology: bartending skills, classic cocktail recipes, mixing techniques, spirit categories, leading brands, WSET Award in Spirits (Level 2)
  • Alcohol, Stock Control & Employment: Licensed Controller Qualification (LCQ), Sale of Alcohol Act compliance, checking ID, Employment Relations Act obligations, stock control, inventory management
