This course introduces students to the concepts of food quality and consumer acceptability. It covers the chemical makeup of food and its biological availability, explores dietary requirements, changing consumer attitudes and demands, and examines how food quality is defined and evaluated by consumers, including through sensory tests. The role of microorganisms in food spoilage is also addressed.
