This course examines the principles of winemaking and the chemical and physical properties of juice and wine. It covers wine processing and storage, as well as the chemical and sensory analysis of wines. Students will learn about wine styles (including both fortified and unfortified types), aroma and flavour, oak and cooperage, organic winemaking, and wine faults. Critical review and literature analysis skills will be developed within applied oenology topics.
